Chaga Mushroom Fried Rice

Chaga-infused rice recipes offer a delightful and healthful way to incorporate the benefits of Chaga into your daily meals. Enjoy experimenting with these dishes and discovering the unique flavour and nutritional profile of Chaga rice!

Ingredients:

  • 2 cups cooked jasmine rice (preferably day-old and chilled)

  • 1 cup mixed vegetables (peas, carrots, corn, diced bell peppers, etc.)

  • 2 tablespoons Chaga extract (liquid or powder)

  • 2 tablespoons soy sauce

  • 1 tablespoon sesame oil

  • 2 green onions, chopped

  • 2 cloves garlic, minced

  • 2 eggs, beaten

  • Salt and pepper to taste

How to Cook Chaga Mushroom Fried Rice?

Prep Ingredients:

  • Ensure that all your ingredients are chopped and ready before starting to cook.

Stir-fry Vegetables:

  • In a large skillet or wok, heat a bit of oil over medium-high heat. Add minced garlic and stir briefly.

  • Add mixed vegetables and stir-fry until they are slightly tender but still crisp.

Add Chaga Extract and Rice:

  • Pour Chaga extract and soy sauce over the vegetables. Stir to combine.

  • Add the chilled, cooked rice to the skillet. Use a spatula to break up any clumps.

Create a Well:

  • Push the rice and vegetables to the side of the pan, creating a well in the center.

Scramble Eggs:

  • Pour the beaten eggs into the well. Let them sit for a few seconds and then scramble them with the spatula until fully cooked.

Combine and Season:

  • Mix the scrambled eggs with the rice and vegetables. Drizzle sesame oil over the mixture and stir well.

  • Season with salt and pepper to taste.

Garnish and Serve:

  • Stir in chopped green onions just before serving.

  • Serve your Chaga Mushroom Fried Rice hot, garnished with additional green onions if desired.
